L-Glutathione Reduced is added to yogurt and baby food to act as a stabilizing agent. In surimi, it prevents color darkening. It is also used in pasta formulations to decrease production times and to enhance the nutritional profile of meats, cheeses, and other foods.
It is a white or almost white crystalline powder with a verified purity level (HPLC) between 98.0% and 101.0%. Heavy metals are kept strictly under 10 ppm, with loss on drying capped under 0.5%.
